There will always be plenty of grand taxis at tourist locations or the bus station.
You can even now get a tuk tuk (two wheeled vehicles) and they can pick you up from your riad or in el fna square, or any of the big hotels in this large city can book them. Most have fixed prices which is the best way to hire these.
